Del Maguey was founded in 1995 by artist and mezcal visionary Ron Cooper, who pioneered the single-village model by crediting each mezcal to the specific Zapotec family and village where it was made. Chichicapa comes from San Baltazar Chichicápam, one of the very first two villages Cooper worked with, making this one of the original expressions that helped introduce artisanal mezcal to an international audience. The village sits in a broad valley shaped by both desert and tropical microclimates, giving the local production its own distinct character within the Del Maguey lineup.

This mezcal is made from 100% mature Espadín agave, harvested and processed using methods that have remained largely unchanged for roughly four centuries. The piñas are roasted in an underground pit, crushed, and naturally fermented before being twice distilled and bottled unblended, with production intentionally kept limited each year to preserve consistency and quality. No chemicals, colorings, or additives are used at any stage, keeping the spirit a direct expression of the agave and the village's terroir.

Chichicapa carries a medium-intensity nose with a complex layering of citrus and subtle vegetal notes. On the palate it is smooth and well balanced, with roasted agave sweetness giving way to a long, elegant finish marked by cooling overtones of mint. It is well suited to slow sipping neat, allowing its layered character to unfold gradually in the glass.
