Bittermens was started in 2007 by Avery and Janet Glasser after they were invited to a bitters-making session at San Francisco's 209 Distillery, an experience that led them to begin formulating their own recipes. Positive feedback from bartenders in San Francisco, New York, and Boston pushed the couple to formalize the business, and after securing the required permits they began commercial production in 2010, eventually settling in Portland, Oregon, where the brand now makes several thousand bottles a month across its full lineup.

Buckspice Ginger Bitters relies on a combination of dried ginger varieties steeped in alcohol rather than fresh ginger juice, a choice the producer made to keep the bitters shelf stable without sacrificing bite.
