Celery Bitters launched in February 2011 and, despite the name, contains no actual celery. Fee Brothers instead builds the flavor from lovage, an herb known for its concentrated celery-like character, along with natural spice extracts and essential oils. Like several other bitters in the line, it uses a glycerin base rather than high-proof alcohol, landing at a notably low alcohol content that makes it usable well beyond a typical dash.
The bitters lead with a sharp, vegetal celery aroma, backed by lemongrass, white pepper, and a faint grassy note reminiscent of fresh cut stalks. On the palate, concentrated celery flavor is joined by light salinity and a subtle sweetness from the glycerin base, with coriander and a touch of citrus rounding out a long, savory finish. It is best known as a Bloody Mary staple, though it also brings a crisp, herbal edge to a dry Martini.
