Fee Brothers has operated out of Rochester, New York since 1864, growing from a small family shop into one of the longest-running bitters producers in the country. Now led by its fourth generation, the company built its name on old-fashioned bartending staples while also developing newer, less traditional flavors as interest in classic cocktail ingredients revived. Rhubarb Bitters is one of these later additions, formulated to draw on the flavors available in nineteenth-century America and give bartenders an authentic historical option beyond the standard aromatic styles.
Rhubarb Bitters is built on a glycerin base combined with natural and artificial flavors, extracts, and citric acid for tartness, with no single dominant botanical beyond the rhubarb itself. The result is a clear bitters with a light yellow tinge and a texture that leans thicker than many aromatic styles.
The nose leans tart and candy-like, with cooked rhubarb, sour cherry, and a hint of berry sweetness up front. On the palate, that tartness carries through alongside notes of pie filling, clove, and mulled berry spice, giving the bitters a bright, slightly sour character rather than a purely bitter one. The finish stays clean and tangy, with rhubarb lingering longest and a light spice note trailing behind it.
