The Japanese Bitters was founded by bartender Yuki Yamazaki, who began developing the line after creating cocktails for a charity event held at the Japanese Embassy in Toronto in the wake of the 2011 Fukushima earthquake and tsunami. Encouraged by the reception, Yamazaki later traveled to the Netherlands to study alcohol production at the centuries-old Herman Jansen Distillery before returning to Japan, where he spent two years developing his own bitters. The result was marketed as Japan's first domestically produced line of aromatic bitters, built entirely around ingredients native to the country.

Shiso Bitters is made from carefully selected blue shiso sourced from the long-established Aoba plantation in Chiba prefecture, a region also considered the center of Japanese bitters production. Shiso, a culinary herb in the mint family better known outside Japan as a garnish for sushi and a wrapper for wasabi, is extracted into a neutral spirit base to concentrate its herbal character. The finished bitters are typically bottled around 28 percent alcohol by volume, a moderate strength intended to preserve the delicate, leafy quality of the herb rather than overpower it.

The aroma opens crisp and minty, with fresh shiso leading into notes of green tea, basil, and light citrus zest. On the palate the herbaceous, grassy character of the leaf stays central, joined by a faint wintergreen coolness and a whisper of cinnamon and anise underneath. The finish is clean and lingering, leaving a fresh, vegetal impression well suited to gin and tonics, whisky sours, or any drink that benefits from a leafy, herbal lift.
