The Japanese Bitters was founded by Yuki Yamazaki, a Japanese bartender who first got involved in the craft during Toronto's cocktail scene, eventually designing drinks for a charity event tied to the 2011 Fukushima earthquake and tsunami relief effort. That experience set him on a path toward developing bitters rooted specifically in Japanese ingredients, and after training at the historic Herman Jansen Distillery in the Netherlands, he returned home to spend two years perfecting his own recipes. The line is often described as Japan's first domestically produced range of aromatic bitters, and it has since become a favorite among bartenders looking to bring authentic Japanese flavors into cocktails.
Umami Bitters are built around three ingredients long associated with Japanese cooking and umami itself: kelp, dried bonito flakes, and dried shiitake mushrooms, all sourced from across Japan and chosen for their concentrated savory character. A touch of yuzu is worked in to balance the intensity of the base ingredients with a hint of citrus brightness. The finished bitters are bottled at 27 percent alcohol by volume, a strength that keeps the concentrated umami components in balance rather than letting alcohol dominate the profile.
