Underberg was created in 1846 by Hubert Underberg, who spent years developing a proprietary digestif recipe before founding H. Underberg-Albrecht in Rheinberg, Germany. The family-owned company remains in the hands of Underberg descendants today, and members of the family are still personally involved in overseeing production. Aside from a pause during the Second World War due to raw material shortages, the recipe has stayed remarkably consistent, with the company keeping its "semper idem," or "always the same," philosophy central to the brand well into its second century.

Underberg is built from aromatic herbs and roots gathered from 43 countries, distilled and processed separately so that individual ingredients like gentian, angelica, and juniper retain distinct character rather than blending into a single flavor. Gentian and angelica roots are extracted using heat to draw out their deep, earthy bitterness, while juniper berries and citrus peels undergo cold extraction to preserve brighter, more delicate notes. The finished blend rests in oak barrels before bottling at 44 percent alcohol by volume, then is packaged in small, brown paper-wrapped bottles designed for a single quick dose rather than sipping.

The aroma opens with woodsy herbs and a resinous hit of juniper, followed by anise, licorice root, and warm spice. On the palate the bitterness is immediate and intense, led by gentian and joined by clove, cinnamon, and an earthy backbone from angelica, with dark fruit and citrus zest surfacing beneath the spice. The finish is long, medicinal, and warming, staying true to Underberg's role as a potent after-dinner digestif rather than a casual sipping bitters.
