Underberg was created in 1846 by Hubert Underberg, who spent years developing a proprietary digestif recipe before founding H. Underberg-Albrecht in Rheinberg, Germany. The family-owned company remains in the hands of Underberg descendants today, and members of the family are still personally involved in overseeing production. Aside from a pause during the Second World War due to raw material shortages, the recipe has stayed remarkably consistent, with the company keeping its "semper idem," or "always the same," philosophy central to the brand well into its second century.

Underberg is built from aromatic herbs and roots gathered from 43 countries, distilled and processed separately so that individual ingredients like gentian, angelica, and juniper retain distinct character rather than blending into a single flavor.
