Barolo Gallinotto 2019 showcases Castiglione Falletto’s distinctive Nebbiolo character, matured using traditional large Slavonian oak casks to protect the grape’s naturally austere tannins. Crafted using extended maceration periods and bottled without fining, the wine emphasizes site-specific clay-limestone soil expressions rather than enological intervention, resulting in a deeply structured bottling that rewards patient cellaring.

The aroma profile opens with crushed raspberry, dried cherry, and cedar, layered with tobacco leaf and subtle violet. On the palate, fine-grained tannins support flavors of sour plum, cured leather, and toasted spice, while the medium-to-full body cuts through with bright acidity and a distinct saline minerality. Allow sixty to ninety minutes of aeration before serving to soften the youthful framework and unlock deeper herbal complexity.

Suggested Food Pairings

  • Braised beef or veal shanks cooked in local red wine
  • Hand-rolled tajarin pasta with brown butter and fresh mushrooms
  • Risotto al tartufo bianco or wild boar ragù
  • Well-aged hard cheeses like Parmigiano Reggiano or Toma Piemontese

Store horizontally in a stable cool environment (12–14°C) for optimal aging, though earlier consumption after proper decanting reveals why this bottle remains a benchmark for traditionalist Nebbiolo production. Pour into a standard Bordeaux glass and serve slightly below room temperature to highlight the wine’s aromatic precision and finishing length.

94 Points
"With fruit from the Berri Vineyard in La Morra, the Mauro Molino 2019 Barolo Gallinotto gives us a taste of a single-vineyard wine made outside the official MGA classification. The wine has a dustier personality with a bigger mineral presence that recalls limestone and crushed rock. That elegant note gives linearity and saying power to the wine, but it also serves to frame a core of wild berry and rose. This expression also shows a clear oak signature of spice or toasted cinnamon with drying tannins to follow. It offers the whole Nebbiolo package with hints of the extra intensity and firmness that define 2019. Production is 8,000 bottles."
