Built on a foundation of bright organic acids and polished fiber tannins, the wine opens with layers of crushed red cherry, dried fig, and wild thyme, followed by secondary notes of dried rose, graphite, and light tobacco leaf. The palate remains medium-bodied and tightly woven, finishing with a persistent saline minerality that defines the calcareous marl and sandstone bedrock beneath the vineyard.
This structural restraint makes the 2020 exceptionally compatible with fat-forward cooking methods and deeply umami ingredients. Pour it with braised short rib, slow-cooked pork neck, truffle-infused risotto nero, or tagliatelle topped with porcini and pecorino stagionato.
