Gianfranco Fino built his reputation as one of Puglia's most sought-after producers, working almost entirely with old vine Primitivo and Negroamaro grown on his own estate vineyards near Manduria in the Salento peninsula. His labels draw inspiration from the theories of Freud and Jung, reflecting a winemaking philosophy rooted in instinct and passion as much as technique. The GF sparkling rosé stands apart in his portfolio as a tribute to Salento's long tradition of rosé winemaking, reimagined here through the more painstaking traditional method more often associated with Champagne and other classic sparkling regions.

The wine is made entirely from Negroamaro grown on flat, clay and limestone vineyards around Manduria, hand harvested in the second half of August and transported to the winery in refrigerated trucks to preserve freshness. After destemming and a gentle pressing, the grapes undergo a brief cold maceration on the skins before fermenting in French oak barriques. Following a short period of oak aging, the wine is bottled to begin its secondary fermentation, then rests on its lees for a minimum of thirty-six months before disgorgement.

The extended lees aging builds a fine, persistent mousse alongside real textural depth, with red berry fruit and delicate spice woven through a mineral, saline core. The finish stays crisp and refined, balancing richness with real lift. It pairs beautifully with raw seafood, sushi, or a simple plate of briny shellfish.
