Charles Van Canneyt started his négociant label in 2012 as something entirely his own, separate from the family domaine, Hudelot-Noëllat, that he runs for his grandparents. The range has since grown to include tiny lots from Gevrey-Chambertin, Morey-Saint-Denis, Nuits-Saint-Georges, Aloxe-Corton, and Puligny-Montrachet, and he is often counted among Burgundy's new wave of small, sought-after négociants. The same touch he brought to the domaine, lower yields and more judicious oak, guides these wines.

Les Sorbets, sometimes spelled Sorbès, is a premier cru at about 250 meters in Morey-Saint-Denis, the village sandwiched between Gevrey-Chambertin and Chambolle-Musigny. Its name recalls the rowan trees that once grew there, and its clayey brown soils over hard limestone and pebbly scree drain freely, favoring silky wines. The wine is aged in French oak, roughly 20 percent new, for about a year.

Delicate floral aromas mingle with black cherry and blueberry on the nose. The medium-bodied palate offers crunchy red fruit, fresh acidity, silky tannins, and a subtle thread of spice and earthy minerality, finishing creamy yet clean with a hint of strawberry tart. Pair it with pork tenderloin in cherry sauce or herb-roasted rabbit.
