Domaine de Montille traces its roots in Volnay back to the 1730s, though its modern reputation began when Hubert de Montille inherited a modest 2.5-hectare property in 1947 and built it into one of Burgundy's most respected names. His children, Étienne and Alix, have since expanded the estate to about thirty-five hectares, pioneering organic and biodynamic farming across holdings that stretch from the Côte de Beaune into the Côte de Nuits.

En Remilly sits just behind Montrachet on a south-facing slope with shallow, stony limestone soil, widely regarded as Saint-Aubin's finest terroir. De Montille's holding covers roughly 1.8 hectares of vines around sixty years old. Grapes are hand harvested and pressed gently, then fermented with native yeasts in French oak, about thirty percent new, before a slow maturation that preserves the site's natural tension and minerality.

Pale lemon in the glass, the wine opens with fresh apple and ripe orchard fruit backed by a chalky, flinty edge. The palate is generous yet precise, with bright citrus and a mouthwatering, mineral-driven finish.
