2022 Domaine Pavelot - Savigny les Beaune Les Lavieres (750ml)
Hugues Pavelot represents the latest generation to run this family domaine in Savigny-lès-Beaune, continuing a hand-me-down tradition of winemaking passed from his father, Jean-Marc. The estate's roughly thirteen hectares stretch across Savigny, Beaune, and Aloxe-Corton, taking in two hillsides and the valley floor between them, a patchwork of soils and exposures that Hugues works site by site rather than to a single house recipe.
Les Lavières sits on the Pernand-Vergelesses side of the village, its shallow, limestone-flecked soils taking their name from the "laves," the flat stones once cut here for roof tiles. Pavelot farms a small, 0.32-hectare parcel in this clay-rich corner of the climat. Grapes are hand harvested and vinified with a portion of whole clusters, then aged in barrel to preserve the site's firm, mineral-driven structure.
The nose is dark and lifted, with purple florals and black cherry fruit. On the palate the wine is tight and mineral-driven in its youth, though a core of lush fruit flashes through the middle before flinty minerality carries it to a long, smoky finish. Built for the cellar, it will reward patience and pairs well with roast guinea fowl, venison, or a nutty aged Gruyère.
