The Bouley family has farmed in Volnay since 1919, when the estate was founded by François Bouley. His son Jean-Marc expanded the domaine starting in 1974, and Jean-Marc's son Thomas joined in 2002, taking over full direction in 2012. Today the family farms about nine hectares spread across twenty-nine parcels in Volnay, Pommard and Beaune, working sustainably and without herbicides to bring out the character of each individual site.

Les Reversées is a small premier cru parcel of just over half a hectare, planted in 1963 and 1976 on clay and limestone soil mixed with gravel, on a sunny site at the base of the slope. Fermentation uses a portion of whole clusters and native yeasts over two to three weeks, followed by eighteen months aging in oak barrels, a quarter of them new. The wine is bottled without fining or filtration.

The wine shows aromas of flower petals, blood orange and warm spice layered over sweet cherry and raspberry fruit. On the palate it is medium to full bodied, supple and fleshy, with polished tannins and a floral, mouthwatering finish. It drinks with real charm even young. Try it with braised rabbit, roasted quail, or a soft cow's-milk cheese.
