Domaine Joblot played a central role in reviving Givry after phylloxera devastated the Côte Chalonnaise, and many credit the family with putting the appellation back on the map. The estate is now led by the young Juliette Joblot, who farms the family's thirteen and a half hectares sustainably, nine of them premier cru. Rather than judging ripeness by sugar alone, the Joblots time their harvest around acidity, aiming for freshness in every cuvée.

Servoisine is considered the warmest premier cru site in Givry, a south-facing slope of rocky limestone that ripens its Pinot Noir fully and reliably. The grapes are entirely destemmed before a gentle fermentation, and the wine is then aged with about half new oak, a relatively generous proportion meant to support the site's natural power and structure without masking its character.

The wine offers cooked red cherry, rose and cinnamon spice on the nose, with a touch of smoke and something faintly animal beneath the fruit. On the palate it is racy and structured, the tannins still a little firm but built to soften with age, framed by a suave, delicate texture. Pair it with a good steak or a shallot-laced bavette.
