2023 Servin - Chablis Blanchot (750ml)

Domaine Servin has more than two hundred years of experience in Chablis and stands as a seventh-generation family estate, though it remains somewhat less known than its pedigree deserves. François Servin now runs the domaine with his brother-in-law, Australian winemaker Marc Cameron, whose partnership has drawn praise from critics for wines of real elegance, purity and length.

Blanchot comes from a small parcel of under one hectare, and the 2023 is matured entirely in stainless steel tank rather than barrel, a choice meant to preserve pure fruit and lift rather than add oak character. The site is known among Chablis's grand crus for producing wines of particular finesse, with brioche notes developing as the wine opens up in the glass.

The wine shows green apple and Anjou pear, with a brioche-tinged bouquet that gains intensity as it breathes. The palate is well balanced, with gently lower acidity and a slightly waxy texture that adds weight through the finish. It has a decade of drinking pleasure ahead of it. Serve it with roasted lobster, creamy fish stew, or a young Comté.
