Domaine Servin has cultivated vines in Chablis since 1654, making it one of the region's oldest continuously operating estates across seven generations of the same family. Today the domaine is directed by François Servin alongside longtime associate Mark Cameron, overseeing roughly thirty hectares that include four Grand Cru and six Premier Cru holdings. The estate balances respect for tradition with modern precision in the cellar, aiming for wines that express Chablis terroir with clarity and restraint rather than overt winemaking.

Montée de Tonnerre sits on a steep, east-facing slope just across the valley from the Grand Cru hillside, prized for Kimmeridgian marl and limestone soils laced with fossilized oyster shells. This particular parcel is planted to vines between thirty-five and fifty-five years old, farmed with an emphasis on careful canopy management and, increasingly, hand harvesting. Fermentation and aging take place entirely in stainless steel, a choice meant to protect freshness and let the site's mineral character come through unobscured by oak.

The wine opens with lime, pear, and citrus peel, layered with wet stone, dried flowers, and a faint anise lift. The palate is taut and precise, built around bright acidity and a chalky, saline finish that lingers.

The super-sleek, intense and equally attractively textured flavors culminate in a bone-dry, youthfully austere and sneaky long finale. This could use more depth but the potential is clearly present. I would add that this refined effort is quite classy."
