William Fèvre founded his domaine in 1957 with roughly seventeen acres of vines, expanding steadily into Chablis's best Premier and Grand Cru sites before retiring in 1998 and selling to Champagne Henriot. Didier Séguier, who had previously worked at fellow Henriot property Bouchard Père et Fils, has directed winemaking ever since, carrying the estate through its more recent transition to ownership by Domaines Barons de Rothschild.

Vaillons sits in a valley southwest of Chablis, on the west side of the Serein, a position that tends to give its wines a more floral, delicate character than crus on the river's eastern bank. Fèvre's roughly 3.5 hectares here blend Vaillons proper with fruit from Roncières, Mélinots, and Châtains. The grapes are hand-harvested and moved by gravity to avoid pumping, then split between old French oak barrels and stainless steel for fermentation, with malolactic conversion and around a year of aging. Hail cut 2024 yields to just fifteen hectoliters per hectare.

Cool, airy aromas of white pepper, lemon zest, and quinine lead into a dense, stony, vibrant palate with real cut and a lightly bitter, citrus-inflected finish. Serve it with grilled monkfish or chicken in citrus sauce.
