2024 Manincor - Alto Adige DOC Eichhorn Pinot Bianco (750ml)

Manincor is a historic estate on the shores of Lake Caldaro in Alto Adige, its manor house dating to 1608, when Hieronymus Manincor first received the property from the Austrian emperor. Count Michael Goëss-Enzenberg, a trained oenologist, took over the estate from his uncle in 1991 and began estate bottling for the first time, having previously sold its grapes to local cooperatives. Since 2009 the entire fifty-hectare property has been certified biodynamic, and Manincor built a three-story, gravity-fed cellar entirely underground, a design meant to work with the land rather than disrupt it.

Eichhorn is a single-vineyard Pinot Bianco grown in Terlano, in the Lieben Aich site, on volcanic, sand-dominant soil at around 300 meters above sea level with a warm, south-southwest facing exposure. After destemming, the grapes undergo a brief maceration on the skins to draw out aroma and structure, then ferment spontaneously in large wooden barrels using native yeasts. The wine rests on its lees for four months afterward, a step that builds richness and lifts its aromatic profile.

The wine pours a bright, shiny yellow, opening with ripe apple, white flowers, and a distinct mineral character. The palate is salty and vibrant, carried by pronounced mineral acidity through a long, persistent finish. It pairs nicely with shellfish, delicate seafood preparations, or grilled vegetables.
