2025 Pazo Senorans - Albarino (750ml)
Pazo de Señorans has produced Albariño since 1979, when Marisol Bueno and Javier Mareque acquired a sixteenth-century manor house in the Val do Salnés and replanted its vineyards to the grape. The first vintage was released in 1990, and winemaker Ana Quintela, who joined in 1992, has guided the wine's reputation as one of the most respected expressions of Albariño in Rías Baixas ever since.
The vineyards sit close to the Atlantic in the Val do Salnés, planted on granitic, sandy soils that lend the wine its characteristic minerality. Grapes are picked and sorted by hand, then given a brief skin maceration before a slow, temperature-controlled fermentation in stainless steel. The wine rests on its lees for five months with regular bâtonnage to build texture and creaminess, then spends several months settling in bottle before release, favoring freshness over richness.
Pale straw yellow with green highlights, the wine offers aromas of apple, pear, and citrus with a subtle herbal edge. On the palate it is lively and fresh, with firm acidity balanced by a creamy texture from the lees work, finishing long and slightly saline. It pairs naturally with grilled octopus, fresh shellfish, or spiced dishes like Thai curry.
