Seedlip Garden 108 (Herbal) Non-Alcoholic

Seedlip was founded in the UK in 2013 by Ben Branson, whose family has farmed in Lincolnshire for three hundred years. Branson set out to build the world's first genuinely distilled non-alcoholic spirit, inspired by a 1651 book of herbal remedies, and Garden 108, launched in 2016 as the brand's second expression, was created to recapture a specific childhood memory of picking and eating fresh peas in the fields with his grandfather.

Garden 108 is built around six botanicals, with peas as the defining ingredient, layered with hay and hops for savory depth, then rounded out with rosemary, thyme, and spearmint. Deliberately free of juniper, it steers well away from a gin-style profile and instead aims for something entirely its own, evoking the English countryside rather than a classic spirit. As with the rest of the range, each botanical is macerated and distilled separately before blending, and the finished spirit contains no alcohol, sugar, or calories.

The aroma is grassy and green, with hay and fresh pea leading, backed by herbaceous thyme and rosemary. On the palate, that same vegetal sweetness carries through, savory rather than fruity, with spearmint adding a cooling lift and rosemary and thyme bringing structure underneath. The finish is clean and herbal, closing crisp rather than sweet. It's a genuinely unusual profile, closer to a savory garden herb blend than to any traditional spirit.
