This co-fermented field blend comes from the lieu-dit Prediger, known locally as "Le Précheur," a site of sandy clay pebbles that sits just below the Grand Cru Kaefferkopf. Domaine Weinbach began practicing biodynamics on part of the estate in 1998, and since the 2005 vintage the entire vineyard has been farmed this way.

The 2023 vintage is a co-ferment of 40% Riesling and 30% Auxerrois, rounded out with Pinot Gris, Sylvaner, and Muscat, harvested by hand and gently pressed as whole bunches before fermenting with indigenous yeasts in old oak foudres, then aged for 10 months.

The wine opens with a seducing floral nose touched by peach and apricot, with tender elderflower aromas joined by pear and lemon. On the palate it's firm yet gentle, medium-bodied, and built on a backbone of crisp, elegant acidity, ending on a persistent saline finish. Juicy and bone-dry, it has a bright, slender body that makes the mouth water.

This is a wonderful aperitif wine, equally at home with quiche, onion tart, fish terrine, cheese soufflé, or grilled chicken.
