Dolin Dry Vermouth 750ml
Dolin has produced vermouth in Chambéry, in the French Alps, since 1821, when Joseph Chavasse began crafting a paler, lighter style inspired by the aperitifs of nearby Turin. Chavasse's daughter married Louis-Ferdinand Dolin, who took over the distillery in 1852 and gave it his name. Now in its fifth generation under the Sevez family, Dolin remains independently and proudly family-owned, and in the early twentieth century, Vermouth de Chambéry earned appellation d'origine contrôlée status, the only French vermouth to hold an official geographical designation.
Dolin Dry begins as a delicate Ugni Blanc wine base, which makes up between 75 and 80 percent of the finished product. The wine is infused with seventeen local botanicals, fortified, and lightly sweetened to around 25 grams per liter, a step regulated by the AOC to ensure production stays in Chambéry itself, using real macerated plants rather than pre-made infusions. The result bottles at a lower proof than typical vermouths, reflecting its restrained, gentler style.
On the nose, Dolin Dry offers delicate notes of almond and green herbs, with dried apricot and a faint wormwood edge reminiscent of fino sherry, though with a touch more weight and a slightly oily texture. The palate is crisp and bone dry, finishing with lingering stone fruit and nutty warmth. It's the vermouth that helped define the classic 1:1 gin martini.
