Casar de Burbia is a family-run estate in Spain's Bierzo region that produces wine exclusively from its own organically certified vineyards. This Godello was the winery's first white wine, though it was never intended as a simple one, built from the start with real aging potential in mind. It comes from vines planted in Valtuille de Arriba, a stretch of land prized for hosting some of Bierzo's most sought-after vineyard sites along the historic Camino de Santiago.

The grapes are hand harvested from thirty- to forty-year-old vines in the Valdepiñeiro and Valdaiga plots, at 600 meters above sea level on clay soils scattered with medium-sized stones. This altitude slows ripening considerably, pushing the harvest about twenty days later than lower-lying vineyards nearby. Following a cold pre-fermentation soak, the wine ferments slowly in stainless steel over roughly forty-five days, then rests on its fine lees for nine months, a process that builds texture while keeping the fruit's natural freshness intact.

The wine opens with bold aromas of peach, mango, and citrus, backed by notes of ripe apple and fresh-cut herbs. The palate is soft, fleshy, and long, with a core of ripe sweet fruit balanced by lively acidity. It pairs beautifully with grilled shellfish, baked white fish, or a simple seafood rice dish.
