NV Filipa Pato - Beiras Extra Brut Rose 3B (750ml)
Filipa Pato's family has made wine in Beiras since the 18th century. Her grandfather, João, was the first to bottle wine under the Bairrada DOC once the region was officially demarcated, and her father, Luis Pato, later became known as the "Baga rebel" for revitalizing Bairrada into one of Portugal's most dynamic wine regions. Filipa, a chemical engineer by training who honed her winemaking skills on harvests in Bordeaux, Mendoza, and Margaret River before returning home, launched her own project in 2001. She now farms twelve biodynamically certified hectares scattered across Bairrada alongside her husband, Belgian sommelier William Wouters, crafting what the couple calls "authentic wines without makeup," built entirely around the region's indigenous grape varieties.
3B takes its name from the wine's three defining elements: Bairrada, Baga, and Bical. This bottling blends the two grapes, sourced from vines over thirty years old grown in chalky clay and clay-limestone soils. After a native-yeast primary fermentation in tank, the wine undergoes traditional-method secondary fermentation in bottle, resting on its lees for around nine months before disgorgement with zero dosage and minimal sulfur, then bottled unfined and unfiltered.
The wine pours a pale salmon pink, with aromas of cranberry, wild strawberry, pomegranate, and dried rose petal, joined by savory notes of aniseed and tarragon. Fine, persistent bubbles carry a chalky mineral tension through to a bone-dry finish. It's a wonderful match for charcuterie, grilled shellfish, or simply as an aperitif.
