2022 Henri Boillot - Volnay Caillerets (750ml)

Domaine Henri Boillot is based in Meursault, where the Boillot family has been making wine since the 1880s. Henri joined the domaine in 1975 and bought out his siblings' shares in 2005, and his son Guillaume has worked alongside him since 2008. The estate farms around fourteen hectares of prime Côte de Beaune vineyard, including the monopole Puligny-Montrachet 1er Cru Clos de la Mouchère, alongside a respected négociant business.

Les Caillerets sits on the site of an old quarry in the southern part of Volnay, just below Clos des Chênes, on shallow, high-density limestone soil facing south and east. Boillot's holding here covers less than a hectare of vines. The 2022 was raised with a generous share of new oak, around seventy-five percent, giving the wine a firm, well-judged structural frame without masking the site's natural precision.

The 2022 leans toward the nervier, more mineral side of Volnay, with white pepper, chalk, mint, and crushed rock adding aromatic lift over the core of red fruit. It's a wine of real precision that will need patience to show its best. Once it opens, it pairs beautifully with roast duck, braised veal, or a soft-ripened cheese.
