Heiwa Shuzou Nigori (720ml)
Heiwa Shuzo is based in Wakayama Prefecture, near the sacred Buddhist mountain of Koyasan, and draws its brewing water from the soft, clean springs found there. The brewery has set out with the explicit goal of establishing a new standard for the next generation of sake in Japan, and this nigori, made with notable care despite its modest classification, reflects that ambition well.
Technically labeled a futsushu, or table sake, using Ippanmai rice milled to a relatively low 75 percent, this nigori drinks with far more finesse than its category typically suggests, closer in style to a ginjo. It is coarsely filtered in the traditional nigori method, leaving fine rice particles suspended in the liquid, yet the finished sake remains light and elegant rather than heavy or chunky.
The nose offers vanilla, cream, and steamed rice aromas, while the palate layers in pear, powdered sugar, and a gentle ice cream sweetness without ever tasting cloying. The texture is famously smooth, often described as feeling like fresh powdery snow on the tongue. Serve it chilled alongside light desserts or fresh berries to complement its creamy character.
