Hoyo is produced by Uchigasaki Brewing Company, founded in 1661 by Sakuemon Uchigasaki and now recognized as the oldest sake brewery in Miyagi Prefecture. The brand name itself comes from Chinese folklore, combining the words for phoenix and sunlight, drawn from a legend in which a phoenix singing at sunrise on New Year's Day wards off disaster and brings good fortune. That sense of warmth and optimism carries through the brewery's approach, which favors gentle, approachable sake over bold or showy styles.

Sawayaka is brewed from Manamusume, a rice variety grown specifically in Miyagi Prefecture, using Association No. 901 yeast and the traditional sokujo method. The region's notably soft water plays a key role, contributing to the smooth, mellow character that runs through much of Uchigasaki's lineup. With a Sake Meter Value around minus 3 and mild acidity, Sawayaka leans slightly sweeter than many of the brewery's drier offerings, without ever feeling heavy.

True to its "Summer Breeze" name, the sake offers a bright, juicy aroma with notes of cantaloupe, tangerine, and a touch of lime.
