Masumi - Okuden Kantsukuri "Mirror of Truth" Junmai (720ml)
Okuden Kantsukuri takes its name from the Masumi no Kagami, a national treasure mirror housed at Suwa Taisha, one of Japan's oldest Shinto shrines, located near Miyasaka Jozo's home brewery in Suwa, Nagano Prefecture. The bottle has been on the market since 1982, and the brewery maintains its familiar, consistent character year after year by blending each new vintage with a portion of the previous year's yield, a technique that keeps longtime drinkers coming back to the same comforting profile they remember.
The sake is made from Hitogokochi rice polished to 60 percent, a level that would technically qualify it as ginjo, though Miyasaka chooses to release it simply as a junmai. Fermentation relies on the brewery's own Yeast No. 7, discovered by master brewer Chisato Kubota in 1946 and now one of the most widely used sake yeasts in Japan.
The result is soft and approachable, with a nose of mixed berries, melon, and earthy undertones leading into a semi floral palate layered with dried fruit. Abundant amino acids give it real roundness, especially when served warm, before finishing surprisingly dry. Pair it with salmon, roasted meats, or even burgers.
