Tonoike Sai Junmai Daiginjo (720ml)
Tonoike Sake Brewery was founded in 1937 in Mashiko, Tochigi Prefecture, by Itsugoro Tonoike, whose family had been involved in sake brewing since 1829, when merchants from Omi first began the trade in the region. Today it remains the only sake brewery in Mashiko, a town better known internationally for its centuries-old pottery tradition, and it draws its brewing water from wells fed by snowmelt off the nearby Nikko mountain range.
Sai is crafted using rice grown locally in Tochigi, paired with that same soft, impurity-free mountain water that gives much of Tonoike's lineup its smooth character. The sake is pressed using a traditional bag method, in which the unrefined mash is suspended and only the sake that naturally drips free is collected, a slow, hands-on process aimed at capturing the purest, most authentic expression of the rice.
The result is a lively, complex daiginjo with a light effervescent quality on first sip, giving way to bright citrus, ripe pear, and lychee sweetness. A refreshing wave of umami rounds out the finish, adding depth without weighing the sake down. Serve it chilled alongside sushi, fresh oysters, or other clean, citrus-forward dishes.
