Tozai 'Well of Wisdom' Ginjo (720ml)
Well of Wisdom is one of the founding releases of the Tozai brand, born in 2005 out of a collaboration between American importers Ed Lehrman and Nick Ramkowsky and dedicated sake makers in Japan. The name Tozai itself means East-West, reflecting that original partnership, and this sake, alongside a companion nigori released the same year, helped launch the brand's mission to make premium Japanese sake approachable for everyday drinking rather than reserving it for special occasions.
The sake is brewed at Kizakura in Fushimi, a district in southern Kyoto whose name translates to hidden water, referencing the crystal clear underground springs that have made it one of Japan's most celebrated sake producing areas for centuries. Fushimi's notoriously cold winters also help keep fermentation temperatures low and extended, preserving delicate aromatics. Well of Wisdom is made from a blend of Gohyakumangoku and Gin-Ohmi rice, polished to 55 percent.
The result is a soft, silky ginjo with juicy notes of watermelon, honeydew, and sweet melon, rounded out by a hint of pistachio and a light touch of white pepper on the finish. Serve it chilled as an aperitif, or alongside shrimp skewers, barbecued chicken, or a bright citrus ceviche.
