NV Stephane Tissot - Cremant du Jura Dosage Zero Rose (750ml)
Bénédicte and Stéphane Tissot farm thirty-five hectares of vineyards in the Jura, a domaine founded by Stéphane's father André in 1962. Stéphane made his first vintage at just nineteen years old and quickly moved away from commercial yeasts and conventional farming, converting the estate to organic practices after meeting Nady Foucault of Clos Rougeard. The domaine has been certified organic since 1999 and biodynamic since 2004, and today the Tissots vinify numerous parcel-specific cuvées meant to express the distinct character of each site.
This rosé is a traditional-method blend of Pinot Noir, Poulsard, and Trousseau, built following the méthode traditionnelle required for Crémant du Jura, with hand-harvested fruit and extended aging on the lees in bottle. Roughly half the base wine comes from direct pressing and half from a brief skin maceration, and the wine receives no dosage after disgorgement, letting the fruit and terroir show fully without added sugar.
The result is a pale salmon-hued sparkling wine with aromas of fresh strawberry, redcurrant, and a light smoky, mineral edge. The palate is bone dry and precise, with crisp acidity carrying ripe red fruit through to a long, clean finish. It works beautifully as an aperitif and pairs nicely with charcuterie or aged cheeses.
