Mount Gay is widely regarded as the world's oldest commercial rum distillery, with a surviving deed dating back to 1703 on the island of Barbados. Rémy Cointreau has held majority ownership since 1989, though production continues on the same Caribbean island where the house built its reputation over three centuries. Eclipse, the brand's flagship expression, takes its name from a striking celestial coincidence in 1910, when a total solar eclipse aligned with the passage of Halley's Comet.

The rum is distilled from molasses using a blend of both copper pot still and column still spirit, drawing on water filtered through Barbados's natural coral limestone. After distillation, the rum matures in charred ex-American whiskey barrels, a process that lends it the smoky, toasty character distinctive of the Mount Gay house style.

Eclipse pours a bright golden amber. The nose is full and inviting, layering vanilla, ripe banana, and caramel with baking spice, fresh flowers, and a touch of tropical fruit. On the palate, vanilla bean and almond meet banana and a hint of dark chocolate, rounded out by gentle oak spice. The finish is smooth and warming, with lingering caramelized sugar and toasted wood.

"Color: Freshly brewed chamomile tea.

On the nose: Light fruity and floral scents that make me think of peaches, coconuts, golden kiwi and apples. Midway through, the ethanol becomes more pronounced and contends with the other scents.

In the mouth: Instant coconut juice and hints of coconut milk. The ethanol becomes morepronounced. More coconuts again, but showing bits of incoherent tastes of canned peaches,honey, vanilla, cinnamon and nectarines."
