Fábrica de Licores de Antioquia was established in Itagüí, Colombia, with its current plant completed in 1970, and has grown into the country's leading distillery, owned and operated by the department of Antioquia itself. Aguardiente production in the region traces back to Spanish colonial distillation techniques introduced in the 16th and 17th centuries, and Aguardiente Antioqueño has since become the country's best selling aguardiente and a fixture of Colombian celebrations, from Medellín's Feria de las Flores to Christmas and New Year gatherings. As with other Colombian departments, proceeds from sales help fund the region's public health system.

Sin Azúcar is built on extra neutral alcohol distilled from sugarcane molasses to a very high proof, stripping out most congeners to leave a clean base for flavoring. Natural anise essence is then blended in using proportions the distillery has refined over decades, and the spirit is cut with water drawn from Antioquia's rivers and mountain aquifers. Unlike the traditional recipe, the sin azúcar version skips the added sugar step, resulting in a lower calorie spirit with a sharper, more assertive anise character. The finished product is filtered and bottled at 29% ABV.

The nose and palate are dominated by bright, licorice like anise, dry and clean without the traditional version's sweetness, finishing crisp and warming.
