Cachacier was founded by Peter Banks as the first dedicated cachaça collecting experience in the United States, built to introduce American drinkers to Brazil's native spirit through curated partnerships with individual distilleries. This bottling comes from the Princesa Isabel Distillery, founded in 2016 by Adão Cellia and Maria Isabel de Moraes near the mouth of the Sweet River in Linhares, in the state of Espírito Santo. The distillery has earned recognition for its sustainability practices and careful, small-batch approach to cachaça production.

The cachaça is distilled from hand-cut sugarcane, including the RB7515 and RB5453 varieties along with a small portion of the less common Cana Caiana. After distillation, the spirit rests for two years in jequitibá wood, a Brazilian hardwood prized for imparting only minimal color while still rounding out the spirit's texture. This aging process earned the release recognition as Brazil's best silver cachaça in 2018.

The pale, nearly clear cachaça retains the fresh, grassy character of an unaged spirit while gaining a softened, more rounded mouthfeel from its time in wood. Subtle vanilla notes emerge alongside bright cane sweetness, with none of the sharp ethanol edge found in younger, unaged expressions. It is well suited to sipping neat, on the rocks, or as the base for a caipirinha.
