Cihuatan Cinabrio 12 yr Aged Rum 750ml

Ron Cihuatán is produced by Licorera Cihuatán, El Salvador's first rum distillery, founded in 2004 as part of the Ingenio La Cabaña sugar group. The distillery draws its identity from the ancient Mayan city of Cihuatán, whose name means "the land beside the sleeping woman" in the Nahuat language, and from local legend, in which a goddess is said to still watch over the surrounding sugarcane fields from the shape of the nearby Guazapa Mountain. Each expression in the range pays tribute to a different figure from Mayan mythology, with Cinabrio named for Kinich Ahau, the Mayan sun god associated with the color red.

Cinabrio begins with sugarcane grown near the distillery and processed at a mill that has operated for a century. Following fermentation and distillation, the rum matures for twelve years in hand-selected American oak barrels previously used to age bourbon, developing depth and richness under the tropical climate of the Cihuatán Valley before being bottled at 80 proof.

The rum pours a deep amber with ruby highlights and opens with aromas of cinnamon, anise, and roasted plantain. On the palate, plum and caramelized orange peel meet toasted oak, pistachio, and vanilla, finishing with orange marmalade and a warm, lingering spice.
