Flor de Caña was founded in 1890 when Alfredo Francisco Pellas Canessa established a distillery at the base of San Cristóbal, Nicaragua's tallest and most active volcano. More than 130 years later the same Pellas family still runs the operation, now in its fifth generation, on the single original estate in Chichigalpa. Along the way the company became the first rum producer in the world to earn ISO 9000 certification and has continued to build a reputation around sustainability, operating on renewable energy and holding carbon neutral status.

Gran Reserva is distilled from molasses made from sugarcane grown in fields adjacent to the distillery, run through a five stage continuous column still for a clean, refined spirit. The rum is then aged in small American white oak barrels, sealed with plantain leaves and stored in warehouses without climate control so the volcanic heat and humidity drive faster maturation. Flor de Caña calls this method slow aging, with the seven year designation reflecting an average across the blend rather than a strict minimum, and no coloring or flavoring is added beyond what the barrels impart.

The rum pours a deep mahogany and opens with toasted coconut, vanilla, and dried fig, moving into honey, dark chocolate, and toasted nuts on the palate, with a long, gently spicy finish.
