Flor de Caña was founded in 1890 by Alfredo Francisco Pellas Canessa, who built his distillery at the base of San Cristóbal, Nicaragua's tallest and most active volcano. More than 130 years later the same Pellas family still runs the estate, now in its fifth generation, making Flor de Caña one of the few remaining single family, single estate rum producers of real scale. The distillery has built its modern reputation around sustainability as much as heritage, running on renewable energy and holding carbon neutral certification while remaining free of added sugar or artificial ingredients across its range.

The 18 Year Centenario is distilled from molasses made from sugarcane grown directly on the estate, then aged for eighteen years in small American white oak barrels through the distillery's Slow Aged process, which relies on Nicaragua's volcanic heat and humidity to drive maturation rather than climate controlled warehousing. That long exposure to tropical conditions comes at a cost in volume, with a significant share of the original liquid lost to evaporation over nearly two decades, but it concentrates the rum's character considerably. No coloring or flavoring is added at any stage.

The rum pours a brilliant amber and opens with roasted nuts, caramel, and dried fruit, moving into a full bodied palate of dark chocolate, espresso, and warm baking spice, with a long, oak driven finish that lingers well after the last sip.
