Rhum J.M has been produced since 1845 at Habitation Bellevue in Macouba, on Martinique's northern tip at the foot of Mont Pelée. The distillery is credited as the first recorded producer of rhum agricole and survived the 1902 eruption of Mont Pelée that destroyed much of the island's other distilleries. It draws its sugarcane exclusively from its own volcanic estate fields, and its eco-canne process recycles spent cane fiber to generate steam for distillation, making it one of the more sustainability focused producers in the category.

Blanc 80 Proof is distilled from fresh sugarcane juice rather than molasses, a defining trait of rhum agricole, with cane crushed within an hour of harvest to preserve its vegetal character. The juice ferments naturally for 36 to 48 hours before being run through a Creole copper column still to roughly 70% ABV. The resulting spirit rests for a minimum of three months in stainless steel tanks, then is reduced to bottling strength using mineral rich volcanic water drawn from the estate.

The rum shows a bright, grassy nose of fresh cut cane, white pepper, and citrus, with green banana and a light floral edge, then carries into a clean, mineral driven palate with a crisp, lingering finish.

"Because of the intense tropical humidity and protection from the marine layer over the estate, the sugarcane at Habitation Bellevue, the home of Rhum J.M., grows in a full 12 month cycle and is harvested each Spring. Because they harvest only their own sugarcane, the sugarcane is pressed in less than 1 hour from when it was cut, delivering the freshest possible juice to be made into rhum. The sugarcane juice naturally ferments slowly into a sugarcane wine (Vin de Canne) of around 5% abv over the course of 36-48 hours. The sugarcane wine is then distilled into Rhum Agricole in a Cr?ole Copper Column at or near 70% alcohol, retaining the natural flavor and aroma of the Habitation's cane and terroir. The distillate is then rested in stainless steel tanks for at least three months, before being reduced to bottling strength and bottled.
