Rhum J.M. Terroir Volcanique comes from the Rhum J.M distillery, established in 1845 by Jean Marie Martin and recognized as the first producer of rhum agricole on Martinique. The distillery sits at the base of Mount Pelée, an active volcano whose mineral-rich soil and humid microclimate shape the character of the surrounding cane fields, and this expression was created by master blender Karine Lassalle specifically to capture that volcanic terroir in a single bottling.

The rhum starts from 100% estate-grown sugarcane, crushed within an hour of harvest and open-fermented with French baker's yeast for 24 hours before distillation on a traditional Creole copper column still. The distillate is proofed with spring water drawn from Mount Pelée, then rested and gradually reduced over six months before a minimum three years of aging, first in re-charred bourbon barrels and then in ex-rum barrels given a heavy alligator char in the distillery's own small cooperage, a technique meant to echo the smoky character of the volcanic landscape. No sugar or coloring is added, and the rhum is bottled at 43% ABV.

The nose brings toasted sugar, baked apple, and oaky vanilla alongside leather and honey. On the palate, clove, white pepper, and smoke lead into caramel, cinnamon, and passion fruit, closing on an earthy, smoky finish with dried apple peel.
