An unusually warm growing season temporarily slowed ripening before extending the harvest into early October. This elongated maturation window produced fruit with notable density while preserving the estate’s hallmark freshness. Whole clusters ferment in temperature-controlled concrete vats over approximately three weeks, undergo malolactic conversion in the identical vessels, and then rest for two years in a balanced mix of large Slavonian casks and smaller French Allier oak barrels.
