Bodegas Barbadillo was founded in 1821 in Sanlúcar de Barrameda, one of the three towns that make up Spain's Sherry Triangle, when Benigno Barbadillo returned from Mexico and settled in the coastal city to establish his first winery. His family's business grew quickly, exporting sherry to Britain and beyond, and today Barbadillo remains one of Spain's oldest and largest family-run bodegas, farming roughly 500 hectares of vineyard across the region. Pastora, considered the oldest Manzanilla brand in existence, was revived by the family in 2014 to recapture the style that would have been common in the nineteenth century.

Made entirely from Palomino grapes, Pastora is a Manzanilla Pasada drawn from the historic Solear solera system and aged an additional two years beyond the standard bottling to build extra body and flor character. Its final stage of aging takes place in Barbadillo's own Pastora bodega, sited along the river where conditions favor the biological aging that defines the wine's development. It is bottled en rama, meaning it goes from cask to bottle with only minimal filtration, preserving more of its natural texture and freshness.

Pastora shows a golden hue with a pronounced yeast character, layered with notes of toasted nuts, chamomile, and a touch of sea salt. The palate is bone dry yet remarkably smooth, with a briny, savory intensity and a long, complex finish.
