Dalmore distillery sits on the shores of the Cromarty Firth in the Scottish Highlands and is closely associated with former master distiller emeritus Richard Paterson, who spent decades refining the distillery's approach to cask sourcing and finishing. Dalmore has become nearly synonymous with sherry maturation, a signature carried across most of its core range, with the distillery instantly recognizable for the twelve-point stag emblem featured on every bottle.

This flagship 12 Year Old is first matured for the majority of its life in American oak ex-bourbon casks before finishing in Oloroso sherry casks from Jerez, Spain, a combination intended to layer citrus and chocolate character over a softer bourbon-cask foundation. It is bottled at 40% ABV. Some releases in the range are labeled Sherry Cask Select, which extends the sherry finish and adds a blend of Pedro Ximénez to the Oloroso, though the standard 12 Year Old keeps the finishing simpler and shorter.

The nose brings dried fruit, orange peel, and dark chocolate alongside toasted oak spice. On the palate, gingerbread and praline lead into caramel, chestnut honey, and Dalmore's hallmark candied orange, with cinnamon adding warmth throughout. The finish is long, smooth, and gently spiced, closing on lingering sherry sweetness and oak.

"Launched in late 2008 to replace the previous 12 year old, this single malt from the Dalmore distillery is a toasty, coffee-rich dram with beautifully spice notes and a thick mouthfeel. Very rich for a 12 year old.

Nose: A warm coffee house in Seattle; roasting beans, the oily nuttiness in a fine espresso, there are little notes of malt and cereal and butter from the pastry counter with rich orange from the fruit bowl on the counter.

Palate: Notes of Seville marmalade and triple sec with winter spices and fruitcake. Zesty cocoa and milk chocolate.

Finish: Medium, oranges.
