The GlenAllachie's approach to single cask releases reflects Master Distiller Billy Walker's broader philosophy at the Speyside distillery: rather than standardizing flavor across a large batch, individual barrels are bottled on their own once they reach a point Walker considers their peak. This has made GlenAllachie a favorite among collectors, who track specific cask numbers the way other whisky drinkers track distillery names, since no two single cask releases from the distillery taste quite alike.
Cask No. 3238 was distilled on September 2, 2014 and spent a full decade maturing entirely in an Oloroso sherry hogshead, chosen for the depth and structure that style of cask tends to bring out in GlenAllachie's naturally rich spirit. Bottled in May 2025 at cask strength, the whisky was left non-chill filtered and with its natural mahogany color intact, and only 338 bottles were produced from this single barrel.
The nose leans into dark chocolate, dried orange peel, and baking spice layered over classic Oloroso notes of dried fruit. On the palate, raspberry and cherry meet creamy toffee and milk chocolate, with cinnamon and gentle oak rounding things out. The finish runs long, folding in vanilla and toasted oak beneath a steady wave of dried fruit sweetness.
