Highland Park distillery has operated on Orkney, off the northern coast of Scotland, since 1798, making it one of the most remote and northerly distilleries in the country. Now owned by Edrington, the same house behind The Macallan, Highland Park continues to malt a portion of its own barley on-site using traditional floor maltings, a practice few Scottish distilleries still maintain, and it draws on the island's distinct heather-rich peat.

The 12 Year Old, marketed as Viking Honour, is built from barley peated with that Orcadian heather peat, giving a noticeably softer, more floral smoke than the tarry style found on Islay. The malt is matured predominantly in a combination of European and American sherry-seasoned oak casks for twelve years, then bottled at 40% ABV. This sherry-forward approach shapes both the whisky's deep amber color and its rounded, fruit-driven character.

On the nose, floral honey and dried fruit lead, backed by gentle smoke, vanilla, and warm baking spice. The palate brings sweet malt, heather honey, and orange zest, with sherry cask influence contributing notes of toffee and dark chocolate beneath a wisp of earthy peat. The finish is warm and moderately long, closing on a lingering trace of spice and smoke.
