2023 TJ Krone - Western Cape Borealis Brut (750ml)
Krone is made at the Twee Jonge Gezellen estate, a 300-year-old property in the historic town of Tulbagh that was purchased in 2012 by siblings Svend and Abigail Rands. The pair have focused the estate on producing Krone, a collection of vintage-only sparkling wines made using the traditional method, known locally as Methode Cap Classique, with each release meant to capture the particular character of its harvest year.
Borealis is a blend of Chardonnay and Pinot Noir, harvested at night to preserve freshness, with only the first, gentlest pressing of juice used in the wine. Fermentation takes place inside the bottle, and the wine matures on its lees for around 18 months in the estate's underground cellars, a process that builds complexity and its signature biscuity depth over time.
The wine shows a bright straw-yellow color with fine, persistent bubbles. On the nose it offers green and red apple, white peach, and a touch of lemon curd, with oyster shell and sea breeze minerality. The palate is fresh and creamy, framed by chalky structure and a long, biscuity finish. It pairs beautifully with shellfish, grilled fish, or spiced Asian dishes.
