2025 Ameztoi Txakoli (750ml) — the wine that defines Getaria’s traditional txakolina style. Light, crisp, and refreshing, it carries a natural spritz from a touch of residual carbon dioxide, bottled to preserve its delicate mousse and bright character.

Grapes and Terroir: Produced exclusively from indigenous hondarrabi zuri grapes grown on traditional trellises high on the slopes above Getaria, an ancient Basque fishing village on Spain’s rugged northern coast. This coastal provenance contributes the wine’s signature saline edge and lively sense of place.

Style and Flavor: A joyful, low-alcohol wine with crisp acidity and distinctive salty, briny notes. The gentle spritz enhances its refreshing profile, making it a versatile partner for seafood-forward meals and lighter tapas typical of the Getaria region.

Vinification & Carbonation

After hand harvesting, the must ferments in refrigerated stainless steel tanks using indigenous vineyard yeasts. Toward the end of alcoholic fermentation, the tanks are closed to preserve the natural carbonation from fermentation. The wine is kept chilled to near freezing before bottling to maintain its delicate, effervescent character. This approach preserves the authentic mousse and cannot be replicated by force-carbonation, a method Ameztoi has never employed.
