El Maestro Sierra sits at one of the highest points in the town of Jerez de la Frontera, a location that catches warm, humid sea breezes ideal for sustaining flor year-round. The bodega began as an almacenista business in the 1830s under José Antonio Sierra, a master cooper who eventually built his own stocks of aged sherry rather than simply supplying barrels to others. Today it remains family-run, with wines still moved by hand from criadera to criadera, and its solera stocks are regarded as among the oldest and finest in the region.

This Oloroso is made from Palomino and, unusually for Jerez, carries an actual age statement rather than the standard VOS or VORS designation. Because Oloroso is fortified beyond the point at which flor can survive, it ages entirely through oxidative contact with the barrel rather than under a protective yeast layer, developing richness and color as it slowly loses volume to evaporation. This bottling represents the youngest Oloroso the house produces, spending fifteen years in solera before release, and also serves as the base for El Maestro Sierra's Amoroso, a blend with Pedro Ximénez.

The finished wine is a dark, warm amber, showing aromas of hazelnut, exotic spice, and baked pecan alongside notes of butterscotch, fig, and tobacco. Dry on the palate despite its rich texture, with real intensity and a long, savory finish. It pairs beautifully with aged cheese, cured meats, olives, or roasted nuts.
