Perucchi Extra Dry Vermouth 1L
Perucchi traces back to the 1870s, when Augustus Perucchi produced Spain's first vermouth from a winery in Catalonia's Alt Empordà region. The recipe has stayed close to its original form ever since, and the company has since earned recognition as an official supplier to Spain's Royal Household. Even the bottle's cork stopper still comes from Alt Empordà trees, topped with beech sourced from nearby Osona.
The extra dry is built from a selection of wines and mistelas drawn from Alt Empordà, Valencia, and La Mancha, macerated with more than twenty natural botanicals and free of preservatives or dyes. The blend is aged in centuries-old casks using a solera-style system, with a small portion of vermouth stock more than a century and a half old folded into each batch. It finishes light, at fifteen percent alcohol with very little residual sugar.
Pale with greenish tones, it has a delicate, intense aroma and a fine, elegant palate marked by a touch of red fruit, chamomile, and ginger, leaning more bitter than sweet. The finish is long and powerful for such a light-bodied style. Serve it over ice with lemon and an olive, stir it into a dry martini, or pour it alongside grilled sardines.
