Nuestras Raíces comes from Humberto Alvarado, a third-generation distiller who makes this spirit by hand at his home distillery in La Estancita, a remote jungle village tucked between Tequila and Magdalena, Jalisco. Because production happens outside the officially registered distilleries required for either category, the spirit falls outside the Tequila or Mezcal denominations of origin and is classified instead as a destilado de agave, or agave distillate. This tiny-batch release reflects the same ancestral methods Cazcanes' founders studied when they first learned the craft in this village decades ago.

The agave is Blue Weber, hand chopped with axes before being cooked directly over flame in a steel autoclave rather than a traditional oven. The cooked piñas are then shredded using a mill powered by a vintage 1970s Chevrolet inline six-cylinder engine, and the resulting juice ferments in stainless steel tanks with native, airborne yeast before being twice distilled through a stainless steel pot still with a copper coil. Rather than being cut down to a standard bottling strength, it goes into the bottle at still strength, roughly 94 proof, diluted only with volcanic spring water trucked in from the Navichi springs.

That undiluted intensity carries through every part of the tasting experience. The nose is bright and herbaceous, with roasted agave, fresh lime, cut grass, and grilled vegetables layered over earthy minerality. On the palate, sea salt, citrus, and ripe agave lead into a long, warming finish marked by peppery spice and lingering salinity.
